Sodium erythorbate is a common food preservative and curing agent with antioxidant properties found in a variety of meats, soft drinks, and baked goods. Sodium erythorbate can be retained and analyzedon a Primesep B reverse-phase column using a gradient analytical method with a mobile phase consisting of Acetonitrile (MeCN), water, and Ammonium acetate (AmAc) as the ionic modifier. This analysis method can be UV detected at 250 nm with high resolution and peak symmetry.
